At tex mex establishments they normally use the mexican blend that is sold at grocery stores. They are semi soft white mexican cheese made from cows milk. The white cheese sauce or queso blanco could be mexican cheese like oaxaca cheese asadero cheese or chihuahua cheese. In california i m sure that most of the mexican restaurants use monterey jack cheese.
Somehow after wandering down a meandering web path of odd finger foods and less than stellar game day snacks i had a revelation about tacos. Well i guess i mean texican resturants like mi casita.
